Unlike Champagne, Prosecco is made using the Martinotti /Charmat method, which is tank fermented as opposed to bottle fermented which gives its aperitif (before food) origin of lively freshness. Finishes dry, fresh & rounded, with excellent acidity, texture, weight & persistence.
